I'm an endurance runner. This journal tracks my performance since the addition of HIIT circuits and spinning to my training. Always keep pushing. You will never know your limits unless you go looking for them.
How to make: Pre heat oven to 350 degrees. Mix together the wet ingredients first and then add the dry ingredients. Mix well. Once batter is mixed scoop spoonfuls into muffin/cupcake pan.(use the little paper holders) Cook for 15-25 mins. You can also add chopped nuts to the batter or sprinkle them on top for a little somthing extra;) -ENJOY
